This recipe is lacking a proper name. Around my house we just call it zucchini. I’m going to call it a goulash, although that might not be 100% accurate name. I like this recipe because it’s packed with veggies and in the summer time zucchini is very inexpensive. (Especially when you take it from your parents garden.**wink, wink**) I also love it because everything cooks together in one pot. Let’s hear it for less dishwashing!
Zucchini Goulash
Ingredients:
2-3 medium zucchini
1 lb lean ground beef or turkey
1/2 onion chopped (optional*)
3 – 15 ounce cans of tomato sauce
Directions:
- Chop the onion and slice the zucchini into thin slices
- Brown the ground beef in a 12″ skillet on medium heat.
- Add the onions into the ground beef mixture and let them cook together.
- When the beef is cooked, drain any grease.
- Add in the sliced zucchini and tomato sauce. You want enough tomato sauce to cover the zucchini. You may use more or less tomato sauce depending on how many and the size of the zucchini that you use.
- Cover and simmer the mixture until the zucchini are tender.
- Salt, Pepper, and garlic powder** to taste
- Serve over rice or eat plain.
* I say the onions are optional because they are on my husbands “will not eat” list. Therefore, I omit them from every recipe that calls for them.
** In my opinion, a meal isn’t complete unless garlic is involved. I substitute garlic powder for salt nearly all the time(except for baking, ewww!)

This looks soooo yummy! Can’t wait to try! And, finally, a woman who can’t use onions in a recipe. They make my hubby so ill! I have a question: do you prepare and can salsa, etc? I have never been able to get a definitive answer as to what changes have to be made to a recipe when you omit onions and want to can it…even pressure can. Do you have any experience with that?
