Some blogger buddies I know, started a fun food challenge. Each week we pick an ingredient and then everyone makes a recipe using that ingredient. This is my first week participating and the ingredient is eggs. I have been wanting to make some Chinese food, and chicken fried rice just happens to have eggs. It is perfect. This recipe is so tasty you won’t be calling in for Chinese take-out any more!
Chicken Fried Rice
Ingredients:
3 Tbsp oil
1 cup frozen peas and carrots
3 green onions chopped
1 tablespoon minced garlic
2 eggs
3-4 Tbsp soy sauce
1/2 lb chicken cooked and chopped
4 cups prepared rice

Directions:
- According to package instructions, cook rice to yield 4 cups of prepared rice. Cook and chop 1/2 lb chicken breast and set aside.
- Heat 3 Tbsp oil on medium in a large skillet. Stir fry the peas, carrots, onion, and garlic until tender.
- Crack the eggs into the pan and scramble until cooked through

- Add the 4 cups of prepared rice, chopped chicken, and soy sauce. Stir together until well combined and remove from heat.
Serve and enjoy!

Day-old rice works better than freshly cooked rice because it’s dry and less sticky
