Yesterday, I shared a recipe for Mexican Cornbread Casserole and on the Cute as a Fox Facebook page someone asked me to share my recipe for Spanish rice. I am happy to oblige. I think my mother got this recipe from a coworker years ago and we eat it all the time. My mom is known for being a great cook and a few years ago she put together a cookbook of her favorite recipes. The Spanish rice recipe is called “Ashley’s Favorite Spanish Rice.” That should give an indication of how much I love this stuff!
Restaurant Style Spanish Rice
Ingredients:
- 1 cup long grain white rice
- 1/2 chopped onion
- 1/2 cup tomato sauce
- 2 cups water
- 1 chicken bouillon cube or 1 Tbsp bouillon powder
- 1 tsp Garlic powder
- 1 tsp salt
- 1/4 tsp cumin
Directions:
- Add a small amount of oil(approximately 2 Tbsp) to a pot and brown the rice. Stir occasionally to keep the rice from burning. Add the chopped onion and sauté with the rice.
- Dissolve bouillon cube in the water as the rice is browning. Tip: You can skip the bouillon and water if you want and substitute with 2 cups of chicken stock
- Add the tomato sauce, water, and spices to the browned rice. Simmer covered for about 20 minutes.
It is so easy and delicious. Everyone in my family has pretty varied food preferences, but this is one of the few things I can make that I know everyone will be excited for. In addition to the Mexican Cornbread Casserole, here are some other meal ideas that go great with the rice.
You can go all out and make some delicious salsa roja to go with your Mexican feast.
