I’m back with another #15MinuteSuppers idea and a giveaway. I hope you are enjoying them as much as I do. For this post, the #15MinuteSuppers bloggers received a great package from Wholly Guacamole to craft a delicious and quick meal. I created Avocado Verde Chicken Kabobs on the grill. As a bonus, I’ll show you a quick appetizer that I made using the same method, Avocado Verde Chicken Skewers. Both can be done on the grill in 15 minutes! Both are very tasty!
Avocado Verde Chicken Kabobs
Ingredients:
- Uncooked Chicken Breast chunks (I bought Chicken breast tenders and cut them into chunks)
- Avocado Verde variety of Wholly Salsa
- Multicolored sweet peppers cut into large chunks. I used green, red, and orange.
- Onion cut into large chunks
- Skewers – soaked in water, if they are wood
Directions:
- Place your chicken chunks in a freezer bag with 1/4 cup Avocado Verde Salsa. Let marinate for 5 minutes.
- Assemble your kabobs by alternating meat and veggies on your skewers. I have some really fun spiral skewers, that I love to use.
- Oil the grates of your grill with some olive oil on a paper towel. The salsa makes it even more prone to stick.
- Grill your kabobs over medium/medium high heat for 4 minutes and flip. If you wish, you can brush some more salsa on the kabobs while they are grilling. I did because I really wanted the Avocado Verde flavor to stand out. Cook the second side approximately 4 minutes or until the chicken reaches an internal temperature of 165 degrees.
- Serve with some Wholly Guacamole and all the other fixings on the side.
Your grilling time may vary a bit depending on the temperature of the grill, and the size of your chicken pieces. My pieces were pretty small so they went really fast.
If you are looking for an even faster appetizer, weave the marinated chicken breast tenders onto a skewer and grill them. Serve them on the skewer with some additional Avocado Verde Wholly Salsa and sour cream.

Yum, yum, yum! I did something similar and added fajita steak meat to a bowl of the salsa verde. The flavor was incredible!

I really enjoy this post. What a great way to enjoy kabobs in such a healthy way! Grilled chicken and vegetables sounds perfect to me. I’m a food decor fan and I’m always looking around for great recipes to surprise my family and friends. The other one I liked was the Cajun turkey guac roll-ups. So many new recipes to try.
