If you are a connoisseur of barbecue you probably know that different regions have their own style of barbecue. My Mom grew up in North Carolina, specifically eastern North Carolina and so she grew up loving North Carolina Barbecue. In turn, that’s the style I grew up knowing and loving too. North Carolina BBQ is so unique because you don’t use a barbecue sauce. That’s right, you cook the meat in vinegar and Worcestershire sauce. The meat is so flavorful and tender. It is my favorite use for Apple Cider Vinegar in the kitchen. This meal is very versatile because you can cook it on the stove top or in the slow cooker.
North Carolina Style Barbecue
Ingredients:
6 lbs Boston butt pork roast
1.5 cups Heinz vinegar(Apple Cider or White)
5 ounces Worcestershire sauce(1/2 bottle)
2 tsp salt
2 tsp sugar
2 tsp crushed red pepper
1/2 tsp black pepper
Directions:
- Cube the pork roast into 2 inch cubes
- Add the meat, vinegar, Worcestershire sauce, and spices to the slow cooker.
- Cook on high in the slow cooker for 5 hours. Alternatively, you could simmer on the stove top for 5 hours.
- Let the meat drain for 1 hour, turning occasionally.
- Fork shred the meat and serve on hamburger buns.
I use vinegar most in cooking. It is great for making dressings, marinades, tenderizing meat, pickling, and of course North Carolina Barbecue.
