I’m pretty sure pumpkin mania will be here at least through Thanksgiving. Pumpkin doesn’t have to be limited to just desserts and lattes though. You can cook up some yummy savory pumpkin dishes too.
Here is a really simple recipe for Pumpkin Pasta Sauce. This pumpkin sauce is an easy recipe that can often be mistaken for something much more gourmet. It’s a great way to use that small amount of pumpkin that you have leftover.
Pumpkin Pasta Sauce
Ingredients:
- Ravioli or Gnocchi
- 1 cup of pumpkin
- salt and pepper to taste
- 1 tbsp white vinegar
- 1 tbsp olive oil
- 1 tbsp rosemary
- 1/2 cup of reserved pasta water
- 1/2 cup of milk or half & half
Directions:
- Cook the pasta according to package directions. Reserve 1/2 cup of the pasta water.
- In a stockpot, combine all of the sauce ingredients.Cook until the sauce is heated through, about 5 minutes. Garnish with additional rosemary, Parmesan cheese, and some shredded mozzarella.
How easy is that? I would be willing to bet that you have most of those ingredients in your pantry already.
