I have got two really fun recipe ideas to share with you today but first let’s talk about vegetables. They are extremely good for you and are notoriously difficult to get kids to eat. The trend of hiding vegetables in other food has gotten really big recently I have noticed. That’s better than no vegetables for sure, but wouldn’t it be nice if you didn’t have to hide vegetables from the kids? I bet you can see where I am going with this. Vegetables with Country Crock taste delicious and you don’t need to hide them! I know that I think everything tastes better with Country Crock.
Country Crock and Clare Crespo have come out with a whole digital cookbook on ways to dress up your veggies and present them in fun ways to your families, friends, and most especially your kids. The cookbook is called, “A Very Veggie World” and it has 25 recipes with step by step instructions to turn your veggies into food art. If you have been a reader here for very long, you will probably recognize that I love using food in unique and fun ways. I have never made food art with vegetables before but I might be hooked.
You can see why I jumped at the chance to show you one of the recipes from the cookbook. Well I was supposed to show you one recipe, but I had such a hard time choosing, I made two to show you!
The first one is this eggplant car with zucchini wheels. It is filled with a mixture of eggplant, zucchini, garlic, bell peppers, and of course some Country Crock.
My son thought a vegetable car was pretty cool. No, he didn’t eat that whole thing, I just wanted a cute picture of him with the eggplant car. He thought the spoon was a nice touch. 🙂
The second recipe I made was called, “Pasta full of Posies.” I loved these bell pepper flowers with basil leaves. I thought it looked so cute. The dish was good, although I’ve never had wheat pasta before and I don’t think I will again. You could use these cute flower technique on any pasta salad.
One more “happy kid” shot. I love this little girl. She is such a good eater and she is almost always willing to try new foods. I think she was sent to me to make up for how difficult her older brother can be with food. LOL. She is also a lover of all things pretty, and she loved that there were flowers on her food.
