This week the Food Blogger challenge ingredient is Peanut butter. It is pretty hard to go wrong with peanut butter, and let me tell you that these Brownie Goody Bars are oh so right! I love how quickly these came together. There was cooking and cooling time, but I spent very little time prepping.
Brownie Goody Bars
Ingredients:
1 package fudge brownie mix
1/4 cup water
1/2 cup vegetable oil
2 eggs
1 tub vanilla frosting
3 cups crisp rice cereal
1 cup creamy peanut butter
1 cup semisweet chocolate chips
Directions:
- Heat oven to 350 degrees F. Grease bottom of a 13×9″ pan.
- Combine brownie mix, water, oil, and eggs in a medium bowl until well blended. Spread in pan.
- Bake 25-30 minutes or until toothpick inserted 2 inches from the side of the pan comes out clean or almost clean. Cool completely, about 1 hour.
- Frost the brownies with the frosting and refrigerate while you are preparing the cereal mixture.
- Measure cereal into large bowl and set aside. Melt the peanut butter and chocolate chips in a saucepan over low heat, stirring constantly.
- When the mixture is melted and completely combined, spread over frosted brownies. Cool completely before cutting.
One note on measuring peanut butter. Anytime I cook with peanut butter, I get excited all over again about my measuring cup. It is adjustable and then the bottom slides up and pushes the ingredient out. It is perfect for sticky stuff like peanut butter, honey, molasses, etc. This isn’t a review or sponsored post, I just seriously love the thing.
