I am excited to share this Broccoli Corn cake recipe. It is just a moist corn bread, that it just seems more appropriate to call it corn cake. If you call it Broccoli Corn Cake or Broccoli Cornbread, it doesn’t change the fact that is delicious! My kids even love it, and they won’t eat broccoli.
- 1 box corn muffin mix
- 1 can Sweet Creamed Corn
- 1 stick butter or margarine (melted)
- 1/2 cup frozen chopped broccoli or fresh broccoli that has been steamed.
Directions:
- Preheat the oven to 425° F. Mix the Corn muffin mix, Creamed Corn, and Melted margarine together in a bowl.
- Stir in the 1/2 cup frozen broccoli.
- Pour batter into a loaf pan.
- Bake for 20-25 minutes at 425° F. It should be a nice golden brown.
Easy as pie, or corn cake in this instance. 😉 I love to serve this up with chicken. This time I served it with a ham and bean soup. The whole dinner was delicious. Oh and in case you are really not a broccoli fan, this is superb if you omit the broccoli.

This is such a great idea! Cornbread is so tasty, even to kids, so they probably won’t even notice if you sneak a veggie in there.

This looks so good. I was intrigued when you mentioned it in the forum. I’ll bet you could add ham or chicken right in the batter and have a complete meal on the go!
