I hope everyone is having a wonderful Memorial Day weekend. We are cooking out on the grill a lot this weekend and really the whole summer. My goal is to grill at least once a week.
I wanted to jump in here this weekend and help you out with your Memorial Day grilling plans. We had a great barbecue and everything came from Fresh & Easy. I really mean everything. We had marinated shrimp, hot dogs for the kids, corn on the cob with smoked paprika butter, jalapeno poppers, Caesar salad, and strawberry trifle for dessert. My favorite part is that Fresh & Easy has a coupon for $5 off a $20 purchase. You can print the coupon here (Expires June 6, 2013).
I don’t know if you have ever been into a Fresh & Easy before, but I love that store. They have a great selection of products, but it is smaller than the other grocery stores in my area. There is a Fresh & Easy on the way to my son’s school, and it is so convenient to run in for a few things on the way home from school.
Fresh & Easy has a great line of products that I love using. Especially the cook at home options and the large selection of grab-and-go meals. For our barbecue, we picked up fresh&easy Ready to Cook Jalapeno Poppers and Corn on the Cob. You place the metal trays directly on the grill and follow the directions for cook times. Next time I have a big barbecue, I want to try out the fresh&easy Mixed Grill Pack. It comes with sausage, hamburger patties, and marinated chicken.It has something for everyone.
Here is what our dinner looked like on the grill. I just love my spiral skewers. Below I’ll walk you through how to make the shrimp for yourself.
Grilled Marinated Shrimp
- fresh&easy Organic roasted garlic and herb marinade
- 1 package fresh&easy extra large raw shrimp
- Peel and devein the shrimp. Add the shrimp and 1/2 cup of the marinade to a resealable bag. Let the shrimp marinate for 1-3 hours before cooking.
- Preheat grill to medium heat. Thread the shrimp onto skewers, once through the head, and once near the tail. Discard the marinade.
- Lightly oil the grill with a paper towel soaked in olive oil. Cook the shrimp for 2-3 minutes per side. Shrimp get tough when overcooked, so keep a close eye on them.
Now I’ll tell you about the dessert. I love making strawberry trifles this time of year. They are easy to put together, and strawberries are in season which make them delicious and economical.
Strawberry Trifle
- 1 fresh&easy angel food cake
- 2 lbs strawberries (rinsed)
- 1 container Cool Whip whipped topping
- Chop the angel food cake and strawberries into bite size pieces.
- In a large glass bowl or trifle dish, layer the angel food cake, strawberries, and Cool Whip two times.
