My sister got married back on the 4th of July. I need to keep a lid on the actual wedding for a while longer, but I’m really excited to show you these fun desserts I made for her bridal shower. Labor day is coming up and these would be a perfect addition to your end of season barbecue. They feature over-the cup cookies, over the mug cookies, hanging cookies, or coffee mug cookies. I found a lot of variations in the name when I was trying to figure out what call these fun little cookies.
I found this cute cookie cutter at Cost Plus World Market a while back and I knew I had to have it. These hanging cookies might normally go on a coffee mug, but I thought it would be fun to give it a little twist and make a mixed berry dessert. Here is what the cookie cutter looks like. The desserts were quite simple to put together. Inside the cup is a mixture of cut strawberries and blueberries with a dollop of whipped topping.
For the cookies, I used Meghan Mountford’s sugar cookie and royal icing recipe from her book, Sugarlicious. I love these cookies because they are nice sturdy cookies that isn’t going to fall apart on you. They also taste really good. My sister’s mother-in-law was raving about they were the best sugar cookies she has ever had. I nabbed this shot from Lark’s Country Heart’s instagram feed. I thought it was a cute shot of them all lined up.
After the cookies had cooled completely, I used royal icing to frost the cookies and a sprinkled sanding sugar to give the cookies some sparkle. I love sanding sugar because it covers any kind of frosting errors you might have. I’m still new to cookie decorating, and I definitely don’t have it perfected yet.
Here’s a closer look at the cookies. I love the over-the-cup cookie concept so much, I will be on the look out for more hanging cookie cutters for sure. The look pretty strange on their own, but oh so cute when they are hanging from a cup!
