Cooler weather is teasing us here in Arizona. Some days it is in the low 70’s and the next day it is 85. All my Facebook friends are excitedly posting pictures of the first snow in their area. I don’t know that I would want the snow, but having the ability to snuggle up with a blanket would be nice. It might not be sweater weather yet, but it’s still soup season.
Today I am sharing with you a nice hearty Tomato Tortellini Soup. It’s a great pantry meal. I usually have these ingredients on hand and the tortellini makes it a nice filling meal. The ingredient list looks long, but it actually comes together very quickly.
Tomato Tortellini Soup
Ingredients:
- 2 Tsp Minced Garlic
- 2 Tbsp Olive Oil
- 2 cups Tomato Sauce
- 4 Tbsp Sugar
- 2 Tbsp Cornstarch
- ¼ cup Sun Dried Tomatoes, chopped
- 2 cups Evaporated Milk
- 2 cups Chicken Stock or Vegetable Stock
- 1 tsp Onion Powder
- 1Tbl Italian Seasoning
- 1 ½ tsp Salt
- ½ tsp Pepper
- 9 Oz frozen Cheese Filled Tortellini
- ½ cup Shredded Parmesan Cheese (optional)
Directions:
- Saute the garlic with the olive oil over medium heat in a large stock pot.
- When the garlic turns golden brown, add all the other ingredients except for the tortellini and the Parmesan cheese.
- Bring the soup to a simmer and add the tortellini.
- Cook the tortellini according to the package directions.
- Serve in a bowl and garnish with shredded Parmesan cheese if desired.
I really the love the sun dried tomatoes in this soup. They add a great flavor and texture. I also really love that you can easily customize this soup to your own tastes and preferences. Is there any ingredients you would add to make it your perfect soup? I’ve seen some tortellini and sausage recipes floating around. I might have to try adding the sausage next time. Sounds yummy, right?

This does sound delish! I have Celiac, so can’t have wheat and haven’t seen any GF tortellini, but my mind is busy thinking up other things I could put in the broth–it just sounds so good! (Maybe beans of some sort?)

This does look delicious, and easy to throw together. How perfect for after a long day of holiday shopping out in the cold. I really do like the idea to add sausage, and make it extra hearty.
