I don’t know about you but I’ve been seeing Hasselback potatoes everywhere on the internet. If you aren’t familiar with them, it’s a potato that is very thinly sliced, but not all the way through. Then it is baked in the oven. They look really neat and they fan out a little as they bake. Now, how does that that relate to Twinkies? Well, when I was challenged to create a recipe using Twinkies, I immediately thought about how awesome a Twinkie would be if it was sliced Hasselback style with some fresh strawberries stuffed inside. I was right, it was awesome. I decided to take it to the next level though and make a homemade strawberry sauce!
My husband has a special place for Twinkies in his heart. Growing up, his Mom would include a Twinkie in his lunch box everyday. He was so excited to see Twinkies in our house. He also insisted we freeze some. Apparently, his mom would buy in bulk and store them in the freezer. He loved eating them frozen too! He is probably the biggest fan of this recipe too. He said it is definitely earned a place in his favorite desserts.
Hasselback Twinkies with Strawberry Sauce
Ingredients:
- Strawberry Sauce:
- 1 lb strawberries, hulled and chopped
- 1/2 cup sugar
- 1.5 tsp fresh lemon juice
- Twinkies
- 2-3 fresh strawberries, hulled and thinly sliced
Directions:
- In a saucepan, heat the strawberries, sugar, and lemon juice over medium heat. Stir the ingredients together until the sugar dissolved and the mixture comes to a boil. Reduce the heat to low and simmer for 3 minutes. Blend the strawberry mixture, until smooth. Refrigerate until cool.
- Slice the Twinkies 8 times with a serrated knife, but don’t cut all the way through the Twinkies. Carefully insert a strawberry piece into each Twinkies cut. Serve the Hassleback Twinkies on top of the cold strawberry sauce.
I have some good news! Twinkies is coming out with a new cookbook. It will be out in 2015 to celebrate the 85th anniversary of Twinkies. I’m so excited that Twinkies made a comeback. I can’t wait to see the fun recipes they come up with. I grew up loving Hostess products like Twinkies, and I was so sad when they went away for awhile. There is just something so nostalgic about eating the same snacks you did as a kid. It can really take you back in time.

This looks absolutely delicious!! My first thought was… “Ohhh… what a fancy strawberry shortcake” but because it’s made with Twinkies, I’m sure it’s a lot better.
