S’mores week continues with a S’mores Icebox Cake with Marshmallow Ice Cream.
My mother-in-law introduced me to ice box cake many years ago. When I was thinking of different ways to make a s’more, it occurred to me that icebox cake was already 2/3 of the way there. It had graham, chocolate, and vanilla ice cream. All I had to do was figure out how to incorporate the marshmallow. I came up with a delicious way to make some marshmallow flavored ice cream. It is so good! Plus it gave me a reason to break out the ice cream maker which has been laying dormant for way too long! OK, let’s make some S’mores Icebox Cake.
S’mores Icebox Cake with Marshmallow Ice Cream
Ingredients:
- Vanilla Ice Cream Machine Mix (or your favorite ice cream base)
- Milk – per the package instructions
- Heavy Cream – per the package instructions
- Smuckers Marshmallow Ice Cream Topping
- Graham Crackers
- Chocolate Frosting
- Crushed Graham Crackers, for the top
- Hershey’s Chocolate syrup, for the top
- Mini Mallow Bits, for the top
Directions:
- Follow the instructions on the ice cream machine mix to get your vanilla ice cream base. Stir in the jar of Marshmallow ice cream topping. Pour into the ice cream machine and turn on. The marshmallow may increase the time it takes for the ice cream to thicken.
- A few minutes before the ice cream is done in the machine, line a 9×13″ pan with graham crackers.
- Top the graham crackers with a layer of chocolate frosting. I find it’s easiest to dump some frosting on top and then spread it around. Frosting each cracker individually takes a lot of time.
- Empty the marshmallow ice cream from the machine and spread evenly over the top of the frosting. Freeze for at least two hours or until firm. The ice cream may not freeze hard but it will definitely get solid. Marshmallow acts as an insulator and it may take some extra time to freeze.
- Remove from the freezer and drizzle with chocolate syrup. Sprinkle on the graham cracker bits and the tiny marshmallows. Serve immediately, or return to freezer until ready to serve.
Here’s a shot where you can see all the layers. The ice cream really does taste like marshmallows. I think it’s my favorite part!
