I love dried cranberries all year long but during the holidays it is definitely time to bring on the cranberries! Today I’m sharing a recipe for white chocolate cranberry blondies.I just love how the tart cranberries go so well in desserts. It’s the perfect complement to the white chocolate and blondie bars.
White Chocolate Cranberry Blondies
Ingredients
- 1 Cup Dried Cranberries
- ¾ Butter, softened
- 1 ½ Cups Brown Sugar
- 1 Tbsp. Vanilla Extract
- 2 Eggs
- 1 ½ Cups Flour
- 1 teas. Baking Powder
- ½ teas. Salt
- 1 Cup White Chocolate Chips
Instructions
- Preheat oven to 350˚. In a small bowl add the cranberries and 2 cups of hot water. Let sit for 2 minutes, then drain, place on a paper towel and set aside.
- In a mixing bowl cream together the butter and brown sugar. Add the vanilla and the eggs one at a time, mixing thoroughly after each addition.
- In a small bowl mix together the flour, baking powder and salt. Add the flour mixture in thirds to the butter and sugar, mixing completely between each addition. Fold in the cranberries and white chocolate chips.
- Line a 13×9 pan with parchment paper and spray with cooking spray. Spread the batter evenly in the pan.Cover with foil and bake at 350˚ for 15 minutes. Remove foil and bake until the top is golden brown, another 15-20 minutes. Remove and allow to cool. Cut into squares and serve or store in an airtight container.
