I will be headed off to Disney Social Media Moms Celebration at Disney World this year. It was such a huge honor to be invited and I’m so pleased that we will be able to attend. In order to celebrate, I thought it would be really fun to come up with a Disney inspired rice crispy treat. My first cookbook, Super Cute Crispy Treats, is hitting bookshelves this summer and I’ve got crispy treats on the brain!
One of the first food items that people think of when they hear Disney is churros! My rice crispy version, tastes just like a churro without using a fryer. You can’t get much better than that!
- 6 cups Crisp Rice Cereal
- 10 oz mini marshmallows
- 3 Tbsp margarine
- 1 Tsp cinnamon
- Cinnamon Sugar Topping:
- ½ cup granulated sugar
- 1 Tsp cinnamon
- Heat margarine over low heat in a five quart or larger saucepan. When the margarine has completely melted, add the marshmallows. Heat the marshmallows until completely melted, stirring occasionally. Stir in 1 teaspoon of cinnamon. Remove from heat.
- Stir in the Rice Crispy cereal until the cereal is completely covered in marshmallows. With greased hands, take a hand full of warm treats and form them into a cylinder shape 4-5" long. Place the formed treats on a sheet of parchment paper or a greased baking sheet.
- Mix together the cinnamon sugar topping on pour onto a small plate. Roll each churro treat in the cinnamon sugar.
- Store treats in an airtight container on the counter top and enjoy within 24 hours.
These crispy treats really do taste just like a churro. They are crunchy from the rice cereal and of course the nice sweet cinnamon sugar is a must. I love how the coating sticks so easily to the treats because of the marshmallows.

YUM!!!!! I love Disney’s churros. I will never divulge how many churros I eat while I’m a Disneyland…. only because it’s more than I should have but less than I would like. ha. These look scrumptious! And super happy that you will be a part of DisneySMMC.
