Things have been a little dessert heavy around here lately and so I’m pleased to bring you a delicious dinner idea sponsored by Hidden Valley Ranch and Data Rank. Have you seen that Hidden Valley Ranch has some new flavors? You can now get Avocado Ranch, Cucumber Ranch, Light Cucumber Ranch, Sweet Chili, and Roasted Garlic varieties. I chose to work with the new Roasted Garlic Hidden Valley Ranch, but when I was doing my grocery shopping at Walmart, I found all the new flavors. I really love Garlic, so I just had to give it a try. I think the next flavor I am going to try is the Sweet Chili.
Everyone knows that Hidden Valley Ranch tastes great on salads or veggies, but it’s so much more versatile than that. It’s easy to kick up dinner a notch by incorporating Hidden Valley Ranch as a main ingredient in your meal. I am going to show you just how I did that with my Roasted Garlic Ranch Chicken Skillet.
- 1 lb Rotini or other small pasta of your choice
- 2 Tbsp olive oil
- 1 lb chicken cubed
- 1 green bell pepper, cubed
- 1 cup canned diced tomatoes, drained
- 2 tsp minced garlic
- 1 cup Hidden Valley Ranch Roasted Garlic Dressing
- ⅓ cup milk
- 1 cup shredded mozzarella cheese
- Cook the rotini according to package instructions. While the rotini is cooking, heat the olive oil in a large skillet over medium-high heat.
- Add the chicken and cook until no longer pink. Season with salt and pepper to taste. Add the minced garlic, and chopped bell pepper. Cook until the bell pepper begins to soften, stirring often.
- In a bowl, mix together the Hidden Valley Ranch Roasted Garlic Dressing and milk. Pour over chicken and reduce heat to low.
- Drain the water from the rotini when it is done cooking. Add the cooked rotini and tomatoes to the skillet. Gently stir to get everything coated in sauce. Sprinkle with cheese and cover with a lid. Leave the skillet covered on low heat about 10 minutes or until the cheese has melted.
Skillet recipes like this are my favorite because you can throw everything in one pan and cook it together. I also like that I can cook the chicken and pasta at the same time, so I’m cutting down on total time spent in the kitchen! I am fond of using skillet dinners as a way to get my kids to try new things. You can sneak an ingredient or two in there. Even if they pick out the tomatoes or green peppers, they will at least get the taste of them.
I actually made this dish and took it to a potluck with a bunch of other bloggers. It was fun to get to test out a recipe on my fellow blogging buddies. It was very well received. I made a few tweaks to the recipe as well, so it’s great to get feedback from others too!
